Sesame Swordfish
An excellent meal for any special occasion. Swordfish is the steak of the sea. You can pan fry it or cook it over the grill, but always be sure to leave the inside with a bit of color as that adds immensely to the tenderness and flavor.
Ingredients
- Swordfish steak
- Salt and pepper
- Butter
- Sesame seeds
- Tarragon
- Parsley
- Lemon juice
- Garlic aoli
- Basil pesto
Instructions
- Lay your swordfish steak on a flat surface and pat it down on each side with a small amount of salt and pepper, to taste.
- In a pan, heat a touch of olive oil on medium until it shimmers, then gently place your swordfish. If you hear it sizzling, it's perfect. Don't touch it.
- Cook on each side for 3-4 minutes, or until the outside is golden brown and the sides are mostly white. Flip it up on its narrower sides and cook them until they're white.
- Take your swordfish out of the pan and place it in foil to cool for 5 minutes with a small knob of butter on top
- Once cooled, spread a small amount of basil pesto in the center of your plate.
- Plate your swordfish on top of the basil pesto and add a dash of lemon juice, tarragon, and sesame seeds on top, then spoon a small amount of garlic aoli over the fish and place your parsley over it. Enjoy.
